Vanilla Cupcakes



1 cup milk

1/2 cup vegetable oil

2 tsp vanilla bean extract

2 large eggs lightly beaten

1/2 cup water

2 1/2 cups plain flour

2 1/2 tsp baking powder

2 cups caster sugar

1 tsp salt




  1. Combine wet ingredients in a bowl and give them a light whisk till combined.
  2. Sift the dry ingredients into a separate bowl.
  3. Using an electric mixer, combine the wet ingredients into the dry ingredients while beating on low speed until all the ingredients are combined.
  4. Pour the batter into prepared and lined cupcake pans and bake in a pre-heated oven at 180 degrees celcius for approximately 15-20 mins until golden brown and cooked through.
